Pecan Crunch Cookies Recipe

Ingredients
  • 2 eggs .
  • 2 c pecan pieces .
  • 1 c canola oil .
  • 1 c butter .
  • 4 1/2 c flour .
  • 1 tsp baking soda .
  • 6 oz almond brickle chips .
  • 1 tsp almond extract .
  • 1 c confectioners' sugar .
  • sugar .
  • 1 tsp cream of tartar .
  • 1 tsp salt .
  • 1 c sugar

Directions
  • Step #1 In large mixer bowl mix sugar, powdered sugar, butter & oil until mixed well.
  • Step #2 Add almond extract & eggs & mix well.
  • Step #3 Lightly spoon flour into measuring c & level off.
  • Step #4 Gradually mix in flour, baking soda, salt & cream of tartar at lowish speed.
  • Step #5 By hand, stir in the pecans & brickle chips.
  • Step #6 Roll large tbspful of dough into balls.
  • Step #7 Roll balls in sugar & place on ungreased cookie sheet.
  • Step #8 Flatten in criss-cross pattern with fork.
  • Step #9 Bake at 350°F for 8 mins.
  • Step #10 Do not overbake.
  • Step #11 Cool 1 min before removing from cookie sheet.
