Smoked Salmon Rice Paper Wraps Recipe

Ingredients
  • 1/2 c cabbage, sliced .
  • 1 tbsp soy sauce .
  • 4 rice paper sheets .
  • 1 tsp extra-virgin olive oil .
  • 2 medium mushrooms, sliced .
  • 25 g vermicelli rice noodles .
  • 1 tbsp capers .
  • 100 g smoked salmon .
  • 1 tbsp sweet chili sauce .
  • 1/4 tsp ground black pepper

Directions
  • Step #1 Bring a pot of water to the boil & cook rice noodles for 3 mins.
  • Step #2 Be fairly generous with the amount of water like you are cooking pasta.
  • Step #3 Remove from heat, allow to rest a few mins, drain & place this in a bowl.
  • Step #4 Toss through salmon, cabbage, olive oil, capers, soy sauce, mushroom, chilli sauce & pepper & leave to cool in refrigerator for 10 mins.
  • Step #5 You could also do in advance & leave longer.
  • Step #6 Soak rice paper sheets in warm water a few mins until soft.
  • Step #7 Place mixture evenly in middle of rice paper sheets using a fork so any excess liquid is left behind.
  • Step #8 Wrap by folding end closing & furthest away from you inwards, & then wrap around the outside pieces to form a roll.
  • Step #9 Lightly pour a little left-over sauce over the top & serve.
