Giada's Ceci, Pistachio And Almond Mix Recipe

Ingredients
  • 1/2 tsp cayenne pepper .
  • 1 tbsp sliced fresh thyme leaves .
  • 4 tbsps total olive oil .
  • 1 c raw almonds (blanched or not) .
  • 1 tbsp sliced fresh rosemary leaves .
  • 1 tbsp granulated sugar .
  • 1 (15 oz) can garbanzo beans, drained, rinsed & dried .
  • 1 tsp coarse sea salt .
  • 1 c shelled raw pistachios

Directions
  • Step #1 Preheat oven to 375degrees F.
  • Step #2 Place garbanzo beans on a baking sheet.
  • Step #3 Drizzle with 1 T olive oil & toss to coat thoroughly.
  • Step #4 Spread the beans in a single layer.
  • Step #5 Bake until dark golden--about 40 mins.
  • Step #6 In a small bowl, rosemary, mix the seasoning ingredients (sugar, thyme, sea salt & cayenne) with 3 T olive oil.
  • Step #7 Remove the beans from the oven & mix with the pistachios & almonds.
  • Step #8 Pour the seasoning mixture over the beans & nuts & toss to coat thoroughly.
  • Step #9 Return mixture to the baking sheet & spread into a single layer.
  • Step #10 Bake for 10 to 15 more mins.
  • Step #11 Let cool & serve (or store).
