Mayan Chicken Recipe

Ingredients
  • 1 tsp chili powder .
  • 1/2 tsp coarse black pepper .
  • 1/2 c water .
  • 1 lb chicken thighs .
  • 1/2 tsp coarse sea salt .
  • 1/2 tsp cumin powder .
  • 1 tsp worcestershire sauce .
  • 1 red pepper, sliced .
  • 1 tsp light margarine .
  • 1 yellow squash, washed & sliced .
  • 1 tsp garlic powder .
  • 1/2 c cilantro, washed & sliced .
  • 2 celery ribs, finely sliced .
  • 1 1/2 c green beans, washed & sliced .
  • 2 c quinoa (cooked)

Directions
  • Step #1 Place chicken , pepper, water, margarine, salt, & celery In a large-ish skillet over med-heat/flame.
  • Step #2 Cook one side 8 mins then add spices.
  • Step #3 Turn chicken & add veggies.
  • Step #4 Cover up & cook 10 mins.
  • Step #5 Veggies should be tender & chicken cooked through.
  • Step #6 Add cooked quinoa & heat until all liquids are absorbed.
  • Step #7 Spoon into individual plates & sprinkle with cilantro.
