Japanese-style Crispy Fried Chicken Tidbits Recipe

Ingredients
  • 1 tbsp rice flour (joshinko) .
  • 1 tbsp sesame oil .
  • 1/2 tsp sugar .
  • oil (for frying) .
  • 1/4 tsp salt (I use 1/2 tsp seasoned salt) .
  • 1 pinch cayenne pepper (can use 1/2 tsp black pepper) .
  • 1/2 tsp garlic powder .
  • 1/4 tsp chicken bouillon powder .
  • 1 1/2 lbs boneless skinless chicken breasts (cut into 1-inch cubes) .
  • 3 tbsps potato starch (katakuriko) .
  • 2 eggs, light beaten .
  • 1/4 tsp ginger powder .
  • 1 tbsp soy sauce

Directions
  • Step #1 In a bowl mix eggs with cayenne *or* black pepper, ginger powder, garlic powder, sesame oil, salt sugar, soy sauce & bouillon powder; mix well to mix.
  • Step #2 Add in chicken cubes & toss to coat with the mixture.
  • Step #3 Cover up & put in the fridge for 35 mins.
  • Step #4 Remove from refrigerator & add in the potato starch & rice flour; mix well to mix.
  • Step #5 In a large skillet, wok or deep fryer heat oil to 365 degrees.
  • Step #6 Place chicken (cooking in batches) in hot oil & fry until golden brown.
  • Step #7 drain on paper towels.
