Hearty Onion Soup Recipe

Ingredients
  • 3 c beef stock (or enough to bring the total of dripping & stock to 4 c) .
  • 2 c leftover vegetables, sliced (carrots, potatoes, mushrooms, whatever you have, however much you have.) .
  • 1/2 lb leftover cooked beef, sliced (more or less as desired) .
  • 4 slices provolone cheese or swiss cheese .
  • 1 c beef drippings, degreased (or as much as you have) .
  • 4 slices stale bread (A hearty type like a sourdough, hearty wheat, rye, pumperknickel, etc.) .
  • 2 onions, sliced in rings

Directions
  • Step #1 Heat olive oil & butter together in a pan large enough to hold the onions & broth.
  • Step #2 Saute onions very carefully in half olive oil & half butter until soft & golden but do not allow them to brown.
  • Step #3 Add beef & vegetables.
  • Step #4 Heat through.
  • Step #5 Add dripping & stock.
  • Step #6 Bring to boil & let simmer 10 mins.
  • Step #7 Divide into oven-proof bowls.
  • Step #8 Float the stale bread on top.
  • Step #9 Cover up with the cheese & broil until the cheese bubbles & browns.
