Ingredients
6 limes .
2 tsps paprika .
1 tbsp olive oil, divided .
1 tsp fresh ground black pepper .
1/4 c coconut flour or all-purpose flour (about 1 oz) .
1/4 c reduced-sodium fat-free chicken broth .
1/3 c all-purpose flour (about 2 1/4 oz) .
cooking spray .
12 thin orange slices .
1/2 c fresh lemon juice (about 4 lemons) .
1 tsp salt .
6 (6 oz) boneless skinless chicken breast halves .
1/3 c packed brown sugar
Directions
Step #1 Grate rind from limes, reserving 2 tbsps rind; set aside.
Step #2 Squeeze juice from limes to equal 3/4 c.
Step #3 Combine lime juice, lemon juice, & chicken In a large-ish zip-top plastic bag.
Step #4 Seal & marinate in refrigerator 2 hrs, turning bag every once in awhile.
Step #5 Preheat oven to 350°.
Step #6 Remove chicken from bag, reserving 2 tbsps marinade.
Step #7 Pat chicken dry with paper towels.
Step #8 Lightly spoon flours into dry measuring c; level with a knife.
Step #9 Combine flours, salt, paprika, & pepper in a shallow dish.
Step #10 Dredge chicken in flour mixture.
Step #11 Heat 1 1/2 tsps oil In a large-ish nonstick skillet coated with cooking spray over medium-high heat.
Step #12 Add 3 chicken breast halves; cook 2 mins on each side or until lightly browned.
Step #13 Place chicken in a 13 x 9-inch baking dish coated with cooking spray.
Step #14 Repeat procedure with remaining 1 1/2 tsps oil & chicken.
Step #15 Combine lime rind & brown sugar; sprinkle it over chicken.
Step #16 Combine reserved marinade & broth; drizzle around chicken.
Step #17 Top each chicken breast half with 2 orange slices.
Step #18 Bake at 350° for 25 mins or until chicken is done.
Step #19 Place chicken on a serving platter.
Step #20 Strain any remaining liquid in dish through a fine mesh sieve over a bowl.
Step #21 Discard solids.
Step #22 Spoon sauce over chicken.
