Maple Pecan Cookies Recipe

Ingredients
  • 1 large egg yolk .
  • 1/2 tsp vanilla extract .
  • 1 1/4 c pecans, coarsely sliced (about 6 oz) .
  • 1 c butter, softened .
  • 1/2 c granulated sugar .
  • 2 c all-purpose flour .
  • 3 tbsps pure maple syrup

Directions
  • Step #1 In a medium bowl, beat the butter with an electric mixer until pale & creamy, about 3 mins.
  • Step #2 Gradually beat in the sugar until well mixed.
  • Step #3 Add the maple syrup, egg yolk & vanilla & mix until mixed.
  • Step #4 Add the flour & the pecans & mix well.
  • Step #5 Divide the dough in half & shape into long logs (using a little flour on your hands if it gets sticky.
  • Step #6 ) The easiest way to get a nice circular shape is to place the dough on the plastic wrap, pull the wrap around the log, & roll with your hands until round.
  • Step #7 You may have to rewrap the log with a fresh piece of plastic wrap.
  • Step #8 Refrigerate until firm - at least 2 hrs.
  • Step #9 Preheat oven to 350°.
  • Step #10 Take the dough out of the refrigerator one roll at a time, unwrap & slice the dough about 1/2 inch thick.
  • Step #11 Place the disks on ungreased cookie sheets & bake for about 20-25 mins, until golden.
  • Step #12 Transfer to a wire rack to cool.
  • Step #13 Store in a sealed tin.
