Date Nut Bread Recipe

Ingredients
  • 2 c sliced pitted dates .
  • 1 large egg .
  • 1 tbsp vegetable shortening .
  • 2 c boiling water .
  • 2 tsps baking soda .
  • 1 c sliced candied pecans .
  • 1/2 tsp salt .
  • 3 1/2 c all-purpose flour .
  • cooking spray .
  • 2 c sugar .
  • 1 tsp vanilla extract

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Bring 2 c water to boil.
  • Step #3 In a medium bowl, mix dates & baking soda.
  • Step #4 Pour boiling water over the date mixture, stir & cool.
  • Step #5 In a large bowl or mixing bowl, shortning, salt, mix sugar, vanilla & egg.
  • Step #6 Beat until well mixed.
  • Step #7 Add flour & date mixture alternately to mixing bowl & beat well after each addition.
  • Step #8 Begin & end with flour.
  • Step #9 Stir in pecans.
  • Step #10 Pour batter into 3 (8 1/2 by 4 1/2 inch) loaf pans coated with cooking spray.
  • Step #11 Bake at 350 degrees for 40 to 45 mins.
  • Step #12 Cool 10 mins on wire racks, remove this from pans & cool completely.
