Mini Pepper Corn Muffins Recipe

Ingredients
  • 1/2 c buttermilk .
  • 1/4 tsp salt .
  • 1/2 c cornmeal, plus .
  • 2 tbsps sweet red peppers, sliced .
  • 6 tbsps flour .
  • 1 1/2 tsps sugar .
  • 1 egg .
  • 1/2 tsp baking powder .
  • 1/4 tsp baking soda .
  • 2 tbsps cornmeal .
  • 1 1/2 tsps olive oil .
  • 3 tbsps butter, melted .
  • 2 tbsps green peppers, sliced

Directions
  • Step #1 In a small skillet, saute' peppers in oil for 5 mins or until tender; cool slightly.
  • Step #2 In a bowl, mix the cornmeal, flour, sugar, baking powder, baking soda & salt.
  • Step #3 In a small bowl, buttermilk, whisk the egg, butter & peppers until mixed.
  • Step #4 Stir into dry ingredients just until moistened.
  • Step #5 Fill paper-lined miniature muffin c three-fourths full.
  • Step #6 Bake at 425F degrees for 6-9 mins or until toothpick comes out clean.
  • Step #7 Cool for 5 mins before removing from pans to wire racks.
