Turkey And Sugar Snap Peas In Orange Mustard Sauce Recipe

Ingredients
  • 1 tsp Dijon mustard .
  • 1 tsp orange zest .
  • 2 tsps fresh ginger, peeled & sliced .
  • 1 garlic clove, minced .
  • 1 tbsp cornstarch .
  • 2 tsps soy sauce .
  • 2 tsps honey .
  • For the marinade .
  • 1/2 c orange juice .
  • 1 egg white .
  • For the sauce .
  • 1 shallot, finely sliced .
  • 1 tbsp mirin or sake

Directions
  • Step #1 1 lb boneless, skinless turkey bread meat, cut into 1 ½ cinch chunks.
  • Step #2 2 T vegetable oil.
  • Step #3 ¼ lb sugar snap peas.
  • Step #4 1 c sliced water chestnuts, drained.
  • Step #5 To make the sauce, zest, soy sauce, ginger, mix the orange juice, shallot, honey & mustard in a small bowl & stir this to mix well.
  • Step #6 Set aside.
  • Step #7 To make the marinade, mix the egg white, mirin, soy sauce & cornstarch in a bowl & stir this to dissolve the cornstarch.
  • Step #8 Add the turkey pieces & toss to coat evenly.
  • Step #9 Set aside.
  • Step #10 In a wok or frying pan, over high heat, warm 1 tbsp of the oil, swirling to coat the bottom & sides of the pan.
  • Step #11 When the oil is very hot, but not quite smoking add the peas & stir & toss every 15-20 seconds until just tender, 2-3 mins.
  • Step #12 Add the water chestnuts & stir & toss for 1 min longer.
  • Step #13 Transfer to a dish & set aside.
  • Step #14 Reduce the heat to medium-high.
  • Step #15 Add the remaining 1 tbsp of oil to the pan, again swirling to coat the pan.
  • Step #16 When the oil is hot, add the turkey pieces & stir & toss every 15-20 seconds until firm & no trace of pink remains, 4-5 mins.
  • Step #17 Quickly stir the reserved sauce, add to the pan over medium high heat.
  • Step #18 Bring to a simmer & stir & toss until the sauce thickens slightly, 1-2 mins.
  • Step #19 Return the peas & water chestnuts to the pan & toss to coat with the sauce.
  • Step #20 Cook for 1 mins longer.
  • Step #21 Serve hot.
