Lobster Savannah Recipe

Ingredients
  • 1/2 c sherry wine .
  • 2 tbsps pimiento .
  • 1 bell pepper .
  • 1 dash salt .
  • 1 c cheddar cheese, grated .
  • 4 lobsters, boiled .
  • 2 c half-and-half .
  • 1 c mushrooms, sliced .
  • 1 dash white pepper .
  • 1/2 lb butter .
  • 1 small white onion .
  • 1/4 c flour

Directions
  • Step #1 Remove lobster claws & knuckles, crack them open & reserve meat.
  • Step #2 Using heavy kitchen shears, cut a long 1 1/2-inch- wide rectangle out of the top of each lobster body, extending from about 2 inches behind eyes to about 1 inch from tail.
  • Step #3 Keeping body in one piece, carefully pry meat from tail, & set aside.
  • Step #4 In a large skillet, saute pepper & onion in butter; add mushrooms & flour.
  • Step #5 Heat half-and-half separately & add slowly to keep consistency smooth.
  • Step #6 Stir in pimiento, salt & white pepper to taste.
  • Step #7 Cut lobsters in half; remove meat & cut into small pieces.
  • Step #8 Add lobster meat & sherry to sauce & heat through.
  • Step #9 Scoop into lobster shells.
  • Step #10 Top with grated cheese.
  • Step #11 Put under oven broiler for a few mins to brown.
