Copycat Olive Garden Seafood Portofino Recipe

Ingredients
  • 1 lb crawfish .
  • 1 lb scallops .
  • Seafood Portofino .
  • 2 oz butter .
  • Portofino Sauce .
  • 8 fluid oz milk .
  • 2 lbs shrimp .
  • 8 fluid oz white wine .
  • 60 mussels .
  • 10 garlic cloves, minced .
  • 1 lb mushrooms .
  • 1/2 pint heavy cream .
  • 2 oz yellow onions, 1/4-inch dice .
  • 3 tbsps olive oil .
  • 1 tsp Old Bay Spice uping .
  • 2 oz roux (*try Gumbo Base (aka Roux), or see below) .
  • 1 oz shrimp stock (try Shrimp Stock) .
  • fresh parsley .
  • 1 lb linguine, precooked (hot)

Directions
  • Step #1 PORTOFINO SAUCE:.
  • Step #2 Start by getting your ingredients ready.
  • Step #3 Dice the onion.
  • Step #4 *Make the roux (heat vegetable oil on medium/high, add flour, stir continuously until oil flour mixture browns).
  • Step #5 The amount of oil is about equal to the amount of roux required by the recipe.
  • Step #6 For instance, the original recipe calls for 2 oz of roux.
  • Step #7 So 4 tbsp oil & 4 tbsp white flour.
  • Step #8 Set aside.
  • Step #9 Melt Butter on medium heat.
  • Step #10 Add sliced onion & garlic, stirring frequently, about 5 mins.
  • Step #11 Add white wine.
  • Step #12 Turn up heat to high until boiling then back down to medium.
  • Step #13 Cook 5 mins on medium.
  • Step #14 Stir in roux, shrimp stock, & Old Bay Spice uping.
  • Step #15 Cook 3 mins.
  • Step #16 Add milk & heavy cream.
  • Step #17 Turn heat on high just until mixture starts to boil.
  • Step #18 Turn to medium/low, cover, & stir every once in awhile for 5 mins.
  • Step #19 The sauce is now ready! It can be store for up to one week in the regrigerator.

  • Step #21 Heat oil in saute pan over medium flame.
  • Step #22 Put mushrooms inches Cook 2 mins.
  • Step #23 Add mussels, & cook 30 seconds.
  • Step #24 Add shrimp, crawfish, & scallops.
  • Step #25 Cook until heated through, stirring.
  • Step #26 Add portofino sauce; cook this until bubbling throughout.
  • Step #27 Move mushrooms & seafood to one side of pan.
  • Step #28 Add linguine to other side.
  • Step #29 Using tongs,coat pasta with sauce.
  • Step #30 (mussels should be open).
