1 (8 oz) can tomato sauce (or a few squirts of ketchup) .
2 large eggs, lightly beaten .
black pepper, to taste .
1/4 tsp garlic powder (or some cloves of fresh minced garlic to taste) .
1/2 c red bell peppers, finely sliced .
2 lbs lean ground turkey or lean ground beef
Directions
Step #1 Preheat the oven to 350 degrees F.
Step #2 In a small bowl, stir this together the oats & milk.
Step #3 Very thinly slice 1/4 of the onion into rings & set aside.
Step #4 Finely chop the remaining onion.
Step #5 In a large bowl mix the ground meat, Worcestershire sauce, sliced onion, oat mixture,garlic powder, eggs, ketchup, bell pepper, salt & a few grinds of pepper.
Step #6 Mix just until well mixd.
Step #7 Transfer the mixture to a 9 by 13-inch baking dish & shape into a loaf about 5 inches wide & 2 1/2 inches high.
Step #8 Pour the tomato sauce over the meatloaf & sprinkle with the sliced onions (or if you prefer, squirt some ribbons of ketchup to taste over the top).
Step #9 Bake for about 1 hr or until no longer pink inside.
Step #10 Remove from the oven & let rest for 10 to 15 mins before slicing (it will not be a very firm meatloaf); the height be very low & your slices will be in long rectangular strips.
