Ingredients
1/4 tsp cream of tartar .
1/3 c sugar or date sugar .
1/8 tsp salt .
1 1/2 tsps coconut extract or almond extract .
12 whole almonds (optional) .
1/2 c unsweetened dried shredded coconut .
5 oz almond meal .
2 large egg whites
Directions
Step #1 Preheat the oven to 350°F.
Step #2 Mix all dry ingredients well in a medium bowl.
Step #3 In a separate bowl mix egg whites, cream of tartar & coconut (or almond) extract.
Step #4 Beat them with a standing mixer or electric hand mixer until they form stiff peaks.
Step #5 Gently fold the dry ingredients into the wet ingredients, stirring softly until all ingredients are mixd.
Step #6 Place one tbsp at a time onto a baking sheet lined with parchment paper, leaving 2 inches in between macaroons.
Step #7 Flatten the top of each macaroon slightly with the back of a spoon or with your fingers.
Step #8 Press one whole almond into the top of each cookie if you desire.
Step #9 Cook for 15 mins or until they are becoming slightly browned around the edges & are dry to the touch.
Step #10 Allow to cool before eating.
