Jumpin’ Jambalaya Recipe

Ingredients
  • 1 tsp salt .
  • 1 tsp Tabasco sauce .
  • 1/2 c water .
  • 2 tbsps tomato paste .
  • 1 tbsp sliced parsley .
  • 4 c long grain brown rice, cooked .
  • 16 oz cajun-style stewed tomatoes .
  • 1 small onion, sliced .
  • 1 1/2 c cooked pinto beans .
  • 1 garlic clove, minced .
  • 1 tbsp vegetable oil .
  • 1 c bell peppers, sliced .
  • 1/2 lb shrimp, peeled & sliced .
  • 1/2 c celery, sliced .
  • 8 oz smoked turkey sausage, pieces

Directions
  • Step #1 In a large pot, heat oil over med-heat/flame.
  • Step #2 Sauté onions, celery & peppers until they soften.
  • Step #3 Add garlic, parsley, stewed tomatoes, Tabasco sauce, tomato paste, salt & water.
  • Step #4 Cover up & let simmer for 20 mins, or until veggies are soft.
  • Step #5 Stir in pinto beans.
  • Step #6 Heat skillet with oil over medium-high heat.
  • Step #7 Add turkey sausage & cook this until browned (5 min).
  • Step #8 Add sausage & cooked rice to pot of veggies & let simmer for 5 mins, while stirring.
