Almost-vegan Pumpkin Pie Recipe

Ingredients
  • 1/4 tsp ginger powder .
  • 2 eggs .
  • 2 tsps baking powder .
  • 2 c pumpkin, cooked & mashed .
  • 1/2 tsp nutmeg .
  • 1 1/2 c soy milk .
  • 1 tsp vanilla .
  • 1/4 tsp ground cloves .
  • 1/2 tsp salt .
  • 1/2 c rice flour .
  • 1 tbsp cornstarch .
  • 1 tsp cinnamon .
  • 3/4 c sugar

Directions
  • Step #1 Preheat oven to 350°F Spray a 9-inch deep dish pie pan with cooking spray.
  • Step #2 A deep dish is recommended because this pie will rise a lot during cooking but will fall back down as it cools.
  • Step #3 Put the first five ingredients in the mixer, & mix well.
  • Step #4 Add the pumpkin, & puree.
  • Step #5 Add the remaining ingredients & mix on high for 2 mins, stopping to scrape the sides a couple of times to make sure everything is thoroughly mixed.
  • Step #6 Pour into a pie pan & bake for about 60 mins.
  • Step #7 The top & edges should be brown, but the edges should not be over-done.
  • Step #8 Remove from the oven & allow this to cool on the counter.
  • Step #9 For best results, put in the fridge until chilled before eating.
