Peanut Ginger Chicken Recipe

Ingredients
  • 1/2 c creamy peanut butter .
  • 2 tbsps vegetable oil .
  • 12 skinless chicken thighs (about 3 lbs) .
  • 1/4 c chili sauce .
  • 4 garlic cloves, minced .
  • 2 tbsps vinegar .
  • 1/4 c soy sauce .
  • 1/2 c hot water .
  • 1/4 tsp ground red pepper .
  • 2 tsps grated fresh ginger or 1/2 tsp ground ginger

Directions
  • Step #1 Rinse chicken thighs, pat dry.
  • Step #2 Place the chicken in a plastic bag set in a shallow bowl.
  • Step #3 In a small mixing bowl slowly stir hot water into peanut butter.
  • Step #4 Stir in chili sauce, the 2 T oil, the 2 T vinegar, garlic, soy sauce, ginger & red pepper.
  • Step #5 Pour marinade over chicken.
  • Step #6 Seal the bag & turn to coat chicken thighs with marinade.
  • Step #7 Chill for 12 to 24 hrs, turning the bag every once in awhile.
  • Step #8 In a covered grill arrange medium hot coals around a drip pan.
  • Step #9 Test for medium hot by placing hand over coals.
  • Step #10 When hand gets too hot at 3 seconds the temperature is right.
  • Step #11 Remove chicken from marinade.
  • Step #12 Place chicken on the grill rack over the drip pan but not over the coals.
  • Step #13 Lower the grill hood.
  • Step #14 Grill chicken for 35 to 45 mins or until no pink remains.
  • Step #15 Note: I do not use a drip pan & places the chicken over dead coals, adjacent to the hot coals.
