Pesto Polenta Lasagna--super Easy! Recipe

Ingredients
  • 1 c shredded mozzarella cheese .
  • 1/4 c pine nuts .
  • 1/4 c pesto sauce .
  • 12 oz readymade marinara sauce .
  • 1 (18 oz) package polenta, cut into 1/4 inch thick slices

Directions
  • Step #1 Preheat oven to 375 degrees F (190 degrees C).
  • Step #2 Oil an 11x7x2 inch baking dish.
  • Step #3 Arrange a single layer of polenta in the bottom of the prepared baking dish.
  • Step #4 Spread a thin layer of pesto over the polenta.
  • Step #5 Spoon half of the sauce over the polenta.
  • Step #6 Top with another layer of polenta & sauce.
  • Step #7 Bake, uncovered, for 25 mins.
  • Step #8 Turn on the broiler.
  • Step #9 Top polenta with cheese & pine nuts, & broil until cheese browns & nuts are toasted.
