Lamb And Cucumber Soup Recipe

Ingredients
  • 1/2 tsp sesame oil .
  • 8 oz lamb steaks .
  • salt & pepper .
  • 1 tbsp chinese rice wine .
  • 1 cucumber, cut into a 3 inch piece .
  • 1 tbsp rice wine vinegar .
  • 3 c chicken stock .
  • 1 tbsp light soy sauce

Directions
  • Step #1 Trim off any excess fat from the lamb & discard.
  • Step #2 Thinly slice the lamb into small pieces.
  • Step #3 Put in a shallow dish & add the soy sauce, rice wine & sesame oil.
  • Step #4 Set aside to marinate for 25-30 mins.
  • Step #5 Then discard the marinade.
  • Step #6 Halve the Cucumber piece lengthwise then cut into thin slices Diagonally.
  • Step #7 Bring the Chicken stock to a rolling boil in a wok.
  • Step #8 Add the lamb slices & stir this to seperate.
  • Step #9 Bring back up to a boil then add the cucumber slices, vinegar & salt/pepper.
  • Step #10 Bring to a boil again & serve as soon as possible.
