Step #2 Grease & line a pie dish with baking paper.
Step #3 Mix together your mashed potato, chicken, ham, leeks, crème fraiche & seasonings to taste.
Step #4 Set to one side.
Step #5 Roll out your pastry & line the base of the pie dish - allow the edges to extend over the edge of the pie dish.
Step #6 Put you filling into the pastry pie case - & sit your blackbird or pie funnel in the middle, pushing it down slightly so it is not too high.
Step #7 Turn back the pastry edges & make a raised crust all the way around.
Step #8 Dampen the piecrust with some of the beaten egg & milk mixture.
Step #9 Roll out your pastry for the lid - ease it over the top carefully breaking OR cutting a hole for the blackbird to poke through!
Turn back the edges of the pastry lid & neatly crimp the top together with the bottom - using a fork to help you if necessary.
Step #10 Brush the beaten egg & milk glaze over the top & bake in the pre-heated oven for about 45 mins.
Step #11 Take out & allow this to cool very slightly before serving with fresh vegetables & gravy.
Step #12 This is also wonderful cold as picnic food.
