Healthy Black Bean Chicken Recipe

Ingredients
  • 1/4 c sliced fresh cilantro .
  • 1 (16 oz) can sweet corn, drained .
  • 1 tsp ground cumin .
  • 2-4 boneless skinless chicken breasts .
  • 2 tsps olive oil .
  • salt & pepper .
  • 1 tbsp ground cumin .
  • 2 tbsps tomato paste .
  • 1 (16 oz) can black beans, rinsed & drained .
  • 1 (16 oz) can rotel, undrained

Directions
  • Step #1 Spice up chicken with salt, pepper & 1 t of cumin.
  • Step #2 Heat oil In a large-ish skillet over medium-high, add chicken & cook this until browned (about 5 mins per side).
  • Step #3 Remove chicken from pan & set aside.
  • Step #4 Add black beans, corn, Rotel, tomato paste & 1 T cumin to the pan.
  • Step #5 Stir well, heat until bubbly then return chicken to the pan, reduce heat, cover & let simmer for 10 mins.
  • Step #6 Stir in cilantro & cook 2 mins more.
