Ww 8 Points Enchiladas Recipe

Ingredients
  • 1 medium onion, sliced & satueed until tender .
  • 12 oz shredded cheddar cheese .
  • 1 (28 oz) can red enchilada sauce or green enchilada sauce .
  • 12 corn tortillas .
  • 2 c cooked chicken, sliced .
  • 1 (14 1/2 oz) can Ro-Tel tomatoes & onions, & chilies or very chunky salsa

Directions
  • Step #1 Satuee onion, then add chicken & Rotel, mix thoroughly.
  • Step #2 Dip a tortilla in sauce, place this in 13x9" baking dish.
  • Step #3 Put approximately 3 T.
  • Step #4 of chicken mixture & 2 T.
  • Step #5 of cheese on one end of tortilla, roll up tightly.
  • Step #6 Repeat with remaining tortillas ro fill pan up.
  • Step #7 Top with remaining sauce & a small amount of remaining cheese.
  • Step #8 Cover up with foil wrap & bake 20 mins.
  • Step #9 Remove foil wrap, top this with remaining cheese & bake extra 10 mins or until heated through.
  • Step #10 Serve with optional garnishes (sliced black olives, shredded lettuce, salsa, tomatoes, sour cream, guacamole, shredded cheese) but be sure to add extra points.
