Starbucks Lemon-tipped Biscotti Recipe

Ingredients
  • 1 tsp vanilla extract .
  • 6 tbsps unsalted butter, at about room temp .
  • 2 c sifted powdered sugar .
  • 2 large eggs .
  • 1 tsp grated lemon zest .
  • 2 tsps baking powder .
  • 1/4 c lemon juice .
  • 1 tbsp grated lemon zest .
  • 2 c all-purpose flour .
  • 1/2 c granulated sugar .
  • 1/4 tsp salt .
  • 1 c shelled pistachios, roasted & coarsely sliced

Directions
  • Step #1 Preheat an oven to 375°F In a large bowl, beat the butter, sugar, & lemon zest until well mixed.
  • Step #2 Add the eggs, one at a time, beating well after each addition.
  • Step #3 Stir in the vanilla.
  • Step #4 In a small bowl, baking powder, mix the flour, & salt.
  • Step #5 Add to the butter mixture & mix thoroughly.
  • Step #6 Stir in the nuts.
  • Step #7 The dough will be soft.
  • Step #8 On a lightly floured work surface, divide the dough in half.
  • Step #9 Lightly flour each piece & shape it into a log about 1 1/2" in diameter & 9" long.
  • Step #10 Place the logs about 3" apart on an ungreased baking sheet.
  • Step #11 Press each log down to make it about 3/4" thick & 3" wide.
  • Step #12 Bake until puffed & lightly browned on top, about 20 mins.
  • Step #13 Cool 10 mins on the pan, then slide the logs onto a work surface.
  • Step #14 Using a long, sharp knife, cut each log crosswise into 3/4" thick slices.
  • Step #15 Make each cut with a single swipe of the blade.
  • Step #16 Don't use a sawing motion, which will break the cookies.
  • Step #17 Place the cookies, cut side down, on the baking sheet.
  • Step #18 (The cookies can be touching.
  • Step #19 ) Bake 10 mins.
  • Step #20 Remove from the oven and, using tongs, turn each cookie over.
  • Step #21 Bake until the biscotti are golden, 10 mins more.
  • Step #22 Transfer to wire racks to cool completely.
  • Step #23 To make the icing: in a small bowl, mix the powdered sugar, lemon zest, & lemon juice & beat until smooth.
  • Step #24 Beat in extra drops of lemon juice if necessary to make an icing that will coat the biscotti lightly.
  • Step #25 Dip one end of each biscotti in the icing, turning to coat the tip evenly.
  • Step #26 Place on a wire rack until the icing sets.
