Saffron Broth With Tomato Recipe

Ingredients
  • 1 tbsp olive oil .
  • 1/2 c sliced carrots .
  • 1 c sliced mushrooms .
  • 1/4 c dry white wine .
  • 1 c sliced plum tomatoes .
  • 1/4 c sliced onions .
  • 2 garlic cloves, minced .
  • 10-12 small boiling potatoes, cooked .
  • 1/4 c sliced leeks .
  • 1/4 c sliced celery .
  • 5 c mushroom stock or broth .
  • 2 pinches saffron threads

Directions
  • Step #1 Add the carrots, & garlic to some oil in a saucepan [you can use water, leeks, onions, celery, mushrooms, broth or juice].
  • Step #2 Sauté for 3 mins, until vegetables begin to sweat.
  • Step #3 Add wine, tomatoes, & saffron threads.
  • Step #4 Sauté, stirring, for 2 more mins.
  • Step #5 Add stock & bring to a quick boil.
  • Step #6 Reduce heat & allow dish to simmer for 3 mins.
  • Step #7 Strain the broth.
  • Step #8 To serve, place 2-3 potatoes in each of 5 soup plates or bowls.
  • Step #9 Pour broth over potatoes & SERVE IMMEDIATELY.
