Chicken And Fluffy Dumplings Recipe

Ingredients
  • DUMPLINGS .
  • 2 tsps salt .
  • 1/2 c flour .
  • 1 tbsp minced parsley .
  • 1/2 tsp salt .
  • 3 sprigs fresh parsley .
  • 1 tsp salt .
  • 1 c water .
  • 1 c carrots, sliced .
  • 5 stalks celery, cut up .
  • 2 tsps baking powder .
  • 6 lbs roasting chickens, cut up .
  • 2 tbsps oil or melted shortening .
  • 1/8 tsp nutmeg .
  • 1 1/2 c flour .
  • 2/3 c milk .
  • 1 bay leaf .
  • GRAVY .
  • 4 peppercorns .
  • 1 egg, slightly beaten .
  • 4-4 1/2 c water .
  • 1/4 tsp pepper

Directions
  • Step #1 Combine the first 8 ingedients In a large-ish pot.
  • Step #2 Simmer covered, 1 to 1 1/2 hrs or until chicken is tender.
  • Step #3 Skim off fat.
  • Step #4 DUMPLINGS.
  • Step #5 Combine dry ingredients.
  • Step #6 Stir in remaining ingredients.
  • Step #7 Drop by TBL's onto hot chicken & boiling stock.
  • Step #8 Cover up tightly & return to boiling.
  • Step #9 Reduce heat to a simmer, Do Not Lift Cover up.
  • Step #10 Simmer 12 to 15 mins or until dumplings are dry & fluffy.
  • Step #11 Arrange dumplings & chicken on a platter.
  • Step #12 Strain broth.
  • Step #13 GRAVY.
  • Step #14 Combine flour & water, mix till smooth.
  • Step #15 Bring 4 c reserved broth to boiling, add flour mixture.
  • Step #16 Bring to boil & cook till thickened.
  • Step #17 Add salt & pepper.
  • Step #18 Pour over chicken & dumplings.
