Ingredients
  • 1 tbsp garlic, minced .
  • black pepper .
  • 1/3 c extra-virgin olive oil .
  • 3 russet potatoes, cut in 1/2-inch dice .
  • salt .
  • 1 small onion, sliced .
  • 1 tbsp paprika

Directions
  • Step #1 Bring a large pot of salted water to boil over high heat.
  • Step #2 Add the potatoes.
  • Step #3 Return to the boil.
  • Step #4 Cook until just tender, about 7 mins.
  • Step #5 Drain well in a colander & allow this to cool.
  • Step #6 Heat the olive oil in a 10" skillet over med-heat/flame.
  • Step #7 Add the onion.
  • Step #8 Cook, until golden, stirring, about 10 mins.
  • Step #9 Spice up with salt & pepper.
  • Step #10 Add the garlic & paprika.
  • Step #11 Cook, stirring, 4 mins.
  • Step #12 Raise the heat to high.
  • Step #13 Add the potatoes.
  • Step #14 Cook, stirring constantly & adding more oil if needed, until the potatoes have crisped & browned to desired doneness, about 5 mins.
  • Step #15 Spice up with salt & pepper.
