Diabetic Chewy Molasses Ginger Cookies Recipe

Ingredients
  • 1/3 c margarine, softened (not spread or tub product) .
  • 1 1/2 c all-purpose flour .
  • 1 tsp ground ginger .
  • 1/4 c dark molasses .
  • 1/4 c Splenda granular .
  • 1/2 tsp ground cinnamon .
  • 1 tsp baking soda .
  • 1/3 c Splenda brown sugar mix, packed .
  • 1/4 c Egg Beaters egg substitute .
  • 1 tsp ground cinnamon .
  • 1/2 c whole wheat flour .
  • nonstick cooking spray

Directions
  • Step #1 Spray cookie sheet with nonstick spray; set aside.
  • Step #2 In a large mixing bowl, beat the margarine with an electric mixer on medium to high speed for 30 seconds.
  • Step #3 Add the brown sugar, baking soda, ginger, & 1/2 tsp cinnamon; beat until mixd.
  • Step #4 Beat in Eggbeaters & molasses.
  • Step #5 Beat in as much of the all-purpose & whole wheat flour as you can with the mixer.
  • Step #6 Stir in any remaining flour with a wooden spoon.
  • Step #7 Cover up & chill in the refrigerator for 1 hr.
  • Step #8 Shape dough into 1-inch balls.
  • Step #9 Combine the granulated Splenda & 1 tsp cinnamon.
  • Step #10 Roll balls in Splenda-cinnamon mixture.
  • Step #11 Place 2 inches apart on prepared cookie sheet.
  • Step #12 Bake in a preheated 350F oven for 10 to 11 mins or until set & tops are cracked.
  • Step #13 Remove from cookie sheet.
  • Step #14 Cool on a wire rack.
  • Step #15 Makes about 4 dozen.
