Blueberry-orange Mini Loaves Recipe

Ingredients
  • 1 c 2% low-fat milk .
  • 1/2 c cornmeal .
  • 1 tsp sugar .
  • 1 1/2 c flour .
  • 2 1/2 tsps baking powder .
  • 1 1/2 c blueberries .
  • 1/2 tsp salt .
  • 1 egg, beaten .
  • 1/3 c sugar .
  • 2 tbsps extra light olive oil .
  • 1 tsp grated orange rind

Directions
  • Step #1 Heat oven to 425F degrees F.
  • Step #2 Coat two 4-by-6-inch mini loaf pans with nonstick cooking spray; set aside.
  • Step #3 In a large bowl, mix first 5 ingredients.
  • Step #4 Stir in blueberries & make a well; set aside.
  • Step #5 In a small bowl, mix next 4 ingredients.
  • Step #6 Pour mixture into well in dry ingredients & stir until mix is just moistened & batter is still slightly lumpy.
  • Step #7 Pour batter into pans until they are three-quarters full.
  • Step #8 Sprinkle top remaining 1 tsp sugar evenly over both loaves.
  • Step #9 Bake 40 to 45 mins, or until tops are light golden & a toothpick inserted in center comes out clean.
  • Step #10 Cool for 5 mins in pan on a rack, then remove this from pan to cool completely.
