Brown Rice Crispy Bar Recipe

Ingredients
  • 1 1/2 oz coarsely sliced dried cranberries, approximately 1/3 c .
  • 3 oz toasted slivered almonds, approximately 3/4 c .
  • 1 tbsp orange blossom honey .
  • 3 tbsps flax seed oil, plus extra for the pan .
  • 3 oz puffed brown rice, approximately 6 c .
  • 1 oz dried blueberries, approximately 1/3 c .
  • 7 oz mini marshmallows, approximately 4 c .
  • 1 1/2 oz coarsely sliced dried cherries, approximately 1/3 c

Directions
  • Step #1 Lightly coat the inside of a 13 by 9 by 2-inch metal pan with oil & set aside.
  • Step #2 Preheat the oven to 425F degrees.
  • Step #3 Spread the brown puffed rice evenly on a sheet pan.
  • Step #4 Toast in the oven for 4 mins, stirring every once in awhile.
  • Step #5 While the rice is toasting, prepare the marshmallow mixture.
  • Step #6 Place the oil, honey, & marshmallows In a large-ish mixing bowl set over a pot of carefully simmering water.
  • Step #7 Stir until the marshmallows are melted, approximately 4 to 5 mins.
  • Step #8 Once the marshmallows are melted, almonds, quickly add the toasted brown rice, & fruit & stir this to mix.
  • Step #9 Coat your hands or a spatula with oil & spread the mixture evenly into the pan.
  • Step #10 Once the mixture has cooled completely, cut into squares & store this in an airtight container for 1 to 2 days.
