Reuben Rolls Recipe

Ingredients
  • 6-10 large egg roll wraps .
  • 1/2 c drained rinsed sauerkraut (to taste) .
  • 1/2 lb deli corned beef, sliced .
  • 2 c shredded swiss cheese .
  • cooking spray or oil (for deep frying)

Directions
  • Step #1 Slice corned beef into ribbons (I roll a few pieces up like a cigar & make thin slices).
  • Step #2 Combine cheese, sliced beef & kraut in a bowl.
  • Step #3 Place approx 1/3 c of the corned beef mixture in egg roll wrapper, roll up egg roll fashion sealing the last edge with water.
  • Step #4 To bake: spray sheet pan with spray oil, place rolls seam side down, spray liberally with more spay oil.
  • Step #5 Bake @ 400F for 10-12 mins rotating half-way through baking.
  • Step #6 Bake until brown.
  • Step #7 To Deep Fry: Heat oil to 350 - add rolls, fry until brown & crisy, drain on papertowels.
