Ingredients
1 c heavy cream .
1 c milk .
1/4 oz unflavored gelatin (1 envelope) .
5 oz semisweet chocolate, sliced .
1/4 c water .
5 tbsps superfine sugar .
3 large egg yolks
Directions
Step #1 Put the 1/4 c of water in small bowl & sprinkle the gelatin over it.
Step #2 Put the egg yolks into a large bowl & whisk lightly to mix.
Step #3 Add the sugar & whisk until smooth.
Step #4 Put the milk into a saucepan & bring just to a boil.
Step #5 *Gradually whisk the hot milk into the yolks.
Step #6 Then return the mixture into the saucepan.
Step #7 Cook the custard over medium-low heat, scraping the bottom of the pan constantly with a wooden spoon.
Step #8 Cook the custard sauce until it reaches 165°F.
Step #9 to 170°F on an instant read thermometer(Another test method is to dip a metal spoon into the custard.
Step #10 Run your finger down the middle of the custard, & if the trail stays it's ready).
Step #11 Melt the chocolate in a microwave.
Step #12 Stir the softened gelatin into the custard, whisking until the gelatin is dissolved.
Step #13 Whisk the custard into the chocolate.
Step #14 Pour the mixture into a bowl & allow this to cool to about room temp.
Step #15 Place in refrigerator for 20 mins, stirring every 5 mins.
Step #16 While the custard is chilling, pour cream into a chilled bowl & beat to soft peaks.
Step #17 Oil a mold with almond oil.
Step #18 Gently fold the cream into the custard & pour this into the oiled mold.
Step #19 To serve: Unmold the Bavarian cream a short time before serving.
Step #20 Garnish with your choice , grated chocolate, or whipped cream, orange, raspberries or other fruit.
Step #21 Note:The servings will vary; depends on th mold that you use.
Step #22 Times do not include chilling.
Step #23 Times are guesstimated.
Step #24 *Be very careful when whisking the milk into the yolks.
Step #25 If you put too much hot liquid too quickly into the yolks, you will have scrambled eggs.
Step #26 Just pour in a small amount at first.
