Fresh Pumpkin Bread Recipe

Ingredients
  • 1/2 tsp salt .
  • 3/4 c sugar or Splenda sugar substitute .
  • 1/4 c water .
  • 1 c cooked pumpkin, mashed or canned pumpkin .
  • 1/2 c oil .
  • 2 eggs .
  • 1/2 c nuts (optional) .
  • 1/2 c brown sugar or Splenda brown sugar mix, packed .
  • 1 tbsp vanilla extract .
  • 1 tsp baking soda .
  • 1 1/4 tsps pumpkin pie spice .
  • 2 c all-purpose flour

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Spray standard size loaf pan with cooking spray.
  • Step #3 Combine sugars, oil, pumpkin, water, vanilla extract, & eggs.
  • Step #4 Sift together dry ingredients.
  • Step #5 Slowly add to pumpkin mixture & mix well.
  • Step #6 Pour into prepared baking dish.
  • Step #7 Bake at 350 degrees for 1 hr 15 mins.
  • Step #8 Options:.
  • Step #9 BUNDT: Double recipe.
  • Step #10 (My personal preference.
  • Step #11 ) Drizzle with a 1/2 c.
  • Step #12 brown sugar, 1/2 Celsius sliced pecans or walnuts, & 1/2 Celsius butter glaze.
  • Step #13 Melt sugar in butter.
  • Step #14 Add nuts & drizzle over top of cooled bundt bread.
  • Step #15 MUFFINS: Recipe makes 18 muffins.
  • Step #16 Reduce baking time to 35 mins.
  • Step #17 Freezable for a quick, healthy alternative for dessert.
