Lentil Chili Soup Recipe

Ingredients
  • 1/2 tsp chili powder .
  • 1 tsp dried oregano .
  • 1 tbsp fresh garlic, sliced .
  • 12 oz dry lentils (1 1/2 c) .
  • 1 lb frozen carrots, crinkle cut slices .
  • 1 1/2 tsps vegetable oil .
  • 4 c low-sodium V8 juice .
  • 2 c onions, sliced .
  • 5 c water .
  • 1/2 tsp ground cumin

Directions
  • Step #1 Pour the vegetable oil into a large cooking pot or dutch oven.
  • Step #2 Over medium-high heat, saute the onion & garlic until golden, about 2-3 mins.
  • Step #3 Add remaining ingredients & stir.
  • Step #4 Bring to a boil & then reduce the heat to a simmer.
  • Step #5 Cook uncovered until the lentils are tender, about 45 mins.
  • Step #6 Serve.
