Big Island Poke Recipe

Ingredients
  • 1/4 c peeled minced gingerroot .
  • 1 red bell pepper, cut into 1-inch pieces .
  • 1 small onion, cut into 1-inch cubes .
  • 1/2 tsp red pepper flakes (or 1 sliced Hawaiian chili pepper) .
  • 1/4 c soy sauce .
  • 2 tsps sesame oil .
  • 2 tbsps minced garlic .
  • 1/2 lb coarsely sliced baby bok choy .
  • 1 lb fish fillets ('ahi) .
  • 1/2 c chinese snow peas, trimmed

Directions
  • Step #1 In a bowl, mix the soy sauce, ginger, garlic & chili pepper with 1 tsp sesame oil.
  • Step #2 Place the 'ahi in a bowl & mix with half the soy mixture.
  • Step #3 Cover up & let this stand for 20 mins at about room temp.
  • Step #4 Heat a large nonstick frying pan over high heat & coat the pan with 1 tsp sesame oil & spray with nonstick cooking spray.
  • Step #5 Stir-fry the onion & bell pepper, about 4 mins.
  • Step #6 Add the bok choy & snow peas, toss for another 2 mins.
  • Step #7 Stir in the rest of the soy mixture.
  • Step #8 Cook for another min.
  • Step #9 Push the vegetables to one side of the pan and, over high heat, stir-fry the 'ahi with its sauce for about 2 mins.
  • Step #10 Remove as soon as possible (you want to just sear the 'ahi on the outside) & serve this with vegetables underneath & 'ahi on top.
  • Step #11 Steamed rice would be great, too, but count the calories & limit the portion size.
