Marinated Baby Eggplant (aubergine) Pizza Recipe

Ingredients
  • salt .
  • 2-4 tbsps olive oil .
  • 1/3 c red wine vinegar .
  • salt & pepper, to taste .
  • 2 garlic cloves, crushed .
  • 1/2 c grated pecorino romano cheese .
  • 4 individual size prepared prebaked pizza crusts .
  • 1 pinch crushed red pepper flakes .
  • 3/4 c extra-virgin olive oil .
  • 6 baby eggplants (about 8 oz) .
  • Marinade

Directions
  • Step #1 In a medium bowl, mix together all marinade ingredients.
  • Step #2 Set aside.
  • Step #3 Thinly slice eggplant lengthwise.
  • Step #4 Sprinkle top both cut sides of eggplant with salt.
  • Step #5 Allow eggplant to sit on a paper towel for 15 mins, until paper towel is saturated.
  • Step #6 If desired, brush eggplant to remove excess salt.
  • Step #7 In a cast-iron skillet, heat 2 tbsps olive oil over medium-high heat.
  • Step #8 Cover up bottom of pan with eggplant (do not stack) & fry until golden brown, 2-3 mins per side.
  • Step #9 Set aside & fry any remaining eggplant.
  • Step #10 Add more olive oil if needed.
  • Step #11 Add eggplant to marinade.
  • Step #12 Let it sit for at least 30 mins.
  • Step #13 Preheat oven to 400°.
  • Step #14 Brush pizza crusts with marinade.
  • Step #15 Layer eggplant on each crust.
  • Step #16 Brush with more marinade & top this with cheese.
  • Step #17 Bake for 10 mins until eggplant is hot & cheese is melted.
