Turkey Cutlets With Artichokes And Tomatoes Recipe

Ingredients
  • 6 oz marinated artichokes .
  • 1 tbsp butter .
  • 1 lb turkey cutlets .
  • 1/2 fresh lemon .
  • 1/2 c sliced tomatoes .
  • 2 tbsps olive oil .
  • 1/4 c onions, thin sliced

Directions
  • Step #1 Spice up Cutlets with your favorite rub or spice mix & allow cutlets to set for 20 mins at about room temp.
  • Step #2 Heat a heavy skillet over high heat.
  • Step #3 Add olive oil & reduce heat to medium high.
  • Step #4 Add butter & swirl pan to mix & melt butter.
  • Step #5 When butter has melted add cutlets to pan & brown 2 mins per side.
  • Step #6 Remove cutlets from skillet to a plate to rest.
  • Step #7 Carefully pour artichokes & marinade into the skillet & deglaze.
  • Step #8 Add onions & stir.
  • Step #9 Add cutlets back into skillet on top of artichokes & onions.
  • Step #10 Reduce heat to low & cover skillet.
  • Step #11 Simmer for 10 mins.
  • Step #12 Just before serving add tomatoes on top of cutlets & cover for 3 mins or so to warm but not cook the tomatoes.
  • Step #13 To serve drizzle lemon juice over dish while in the skillet.
  • Step #14 Serve 2 cutlets & vegetables to each diner.
  • Step #15 Garnish with Olive Tapenade.
