Juice Muffins Recipe

Ingredients
  • 1/2 c sugar .
  • 1/2 tsp salt .
  • 1 tsp baking soda .
  • 1 tbsp vanilla extract .
  • 1 1/2 c whole wheat flour .
  • 1 tsp baking powder .
  • 1 1/2 tbsps nutritional yeast .
  • 1 tbsp lemon juice .
  • 1/2 c juice .
  • 8 oz firm tofu

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Mix together the flour, baking soda, baking powder, & salt.
  • Step #3 In a mixer, nutritional yeast, lemon juice, suger, mix until smooth the tofu, juice, & vanilla extract.
  • Step #4 Gently fold the two mixtures together until 'just mixed'.
  • Step #5 Pour into a non-stick muffin pan, & bake for about 25 mins at 350 degrees.
  • Step #6 Cool before removing from the tin.
