Lechon Kawali (crispy Pan-fried Roasted Pork) Recipe

Ingredients
  • chili peppers (optional) .
  • oil (for frying) .
  • 1 shallot, minced or 1 small onion, minced .
  • SAUCE .
  • 3 tbsps soy sauce .
  • 3 garlic cloves, crushed .
  • water, for boiling .
  • 1 garlic clove, minced .
  • salt .
  • 2 laurel leaves (bay leaves) .
  • 1 1/2 lbs pork liempo (pork belly) .
  • 1 tsp peppercorns or 1/2 tsp black pepper .
  • 5 tbsps vinegar

Directions
  • Step #1 Cut the pork belly into serving pieces then mix with the garlic,laurel leaves, peppercorn, salt & water in a pan.
  • Step #2 Bring to a boil & let simmer for 35-45 mins or until skin is tender.
  • Step #3 Drain, cool & air dry.
  • Step #4 Deep-fry liempo pieces in batches until golden brown & blisters appear on skin.
  • Step #5 Mix all the sauce ingredients.
