Favorite Chili Con Queso (a.k.a. Chili Cheese Dip) Recipe

Ingredients
  • 1 (10 oz) can tomatoes & green chilies, sliced. I like Rotel Original .
  • 1 (11 1/2 oz) jar canned jalapeno slices, I like mild .
  • 2 lbs Velveeta cheese

Directions
  • Step #1 Dice the cheese into approximately 1-inch cubes.
  • Step #2 Into a medium saucepan, put the cheese, Rotel tomatoes & the jalapeno slices, reserving the juice from the jalapenos.
  • Step #3 Heat over med-heat/flame approximately 5 mins until the cheese is melted, stirring constantly.
  • Step #4 Add the juice from the jalapenos to make the desired heat as well as the desired consistancy.
  • Step #5 I usually add about 1/2-3/4 of it.
  • Step #6 Serve hot with tortilla chips.
  • Step #7 Can also be done in the crock pot to keep it warm for parties, etc.
