Step #1 Dice the cheese into approximately 1-inch cubes.
Step #2 Into a medium saucepan, put the cheese, Rotel tomatoes & the jalapeno slices, reserving the juice from the jalapenos.
Step #3 Heat over med-heat/flame approximately 5 mins until the cheese is melted, stirring constantly.
Step #4 Add the juice from the jalapenos to make the desired heat as well as the desired consistancy.
Step #5 I usually add about 1/2-3/4 of it.
Step #6 Serve hot with tortilla chips.
Step #7 Can also be done in the crock pot to keep it warm for parties, etc.
