Authentic Thai Tom Yam Soup
Ingredients
1 tsp oregano .
4 hard-boiled eggs, sliced .
1 c vidalia onions, finely sliced .
2 tbsps salt & pepper .
2 lbs boneless skinless chicken breasts, sliced .
2 (12 oz) cans creamed corn .
1-2 tsp olive oil .
1 1/2 tbsps adobo seasoning .
1 tbsp paprika .
1 1/2 tbsps cumin .
1 1/2 lbs lean ground beef .
10-12 large black olives, sliced .
Pam cooking spray or cooking spray .
1-2 c sugar .
1 tbsp crushed red pepper flakes
Directions
Step #1 Saute chicken breasts in hot oil until browned; remove this from heat & rest aside.
Step #2 In a heavy skillet, brown the meat, drain, & put it into a bowl.
Step #3 Add oil (one swirl around pan) to skillet.
Step #4 Saute onion until translucent; add chile flakes, pepper, adobo, paprika, cumin, salt, & oregano.
Step #5 Add the sauteed mixture to the meat & mix.
Step #6 Pack the meat mixture into a pregreased (Pam) shallow 9-inch ovenproof casserole dish.
Step #7 Arrange chicken, eggs & olives on top of meat mixture.
Step #8 Place creamed corn in bowl; mix in 4 tbsps of sugar & salt & pepper to taste.
Step #9 Pour this mixture over the meat mixture & sprinkle with the remaining sugar.
Step #10 It should cover mixture but not overtly.
Step #11 Bake in a 350°F oven for 45 to 60 mins, or until the top is golden.
Step #12 Serve with extra sugar on side.
