Comforting Beef Stew...just Like Grandma Used To Make Recipe

Ingredients
  • 2 c baby portabella mushrooms (cubed) (optional) .
  • 1 tbsp kosher salt .
  • 3 tsps garlic (minced) .
  • 1/4 c olive oil .
  • 1 tbsp fresh Italian parsley (finely sliced) .
  • 3 medium russet potatoes (peeled & sliced) .
  • 1/2 tsp dried thyme .
  • 3 medium red potatoes (peeled & sliced) .
  • 1/2 c all-purpose flour .
  • 2 large carrots (thickly sliced) .
  • 2 medium onions (sliced) .
  • 1 large carrot (finely sliced) .
  • 1/2 tsp pepper .
  • 3 1/2 c beef broth (Swansons or any beef broth will do, 32 oz) .
  • 3 celery (thickly sliced) .
  • 1/2 c frozen green peas (optional) .
  • 1 medium yellow onion (finely sliced) .
  • 1 tsp dried basil .
  • 1/4 c celery (finely sliced) .
  • 2 c stewed tomatoes (16 oz.) .
  • 2 lbs beef tip roast (cut into bite size cubes)

Directions
  • Step #1 Heat olive oil on medium low in Dutch oven or big soup pot.
  • Step #2 Pour flour into plastic bag (1 gallon).
  • Step #3 Place cubed meat inside & shake vigorously.
  • Step #4 Swirl meat w/ wooden spoon to coat thoroughly.
  • Step #5 Pour meat & finely sliced onion into Dutch oven.
  • Step #6 Wait approximately 1.
  • Step #7 5 mins then add 2 tsp of garlic,.
  • Step #8 remaining flour, salt & pepper.
  • Step #9 Stir until browned.
  • Step #10 (Be careful not to burn the garlic).
  • Step #11 Add finely sliced carrots, finely sliced celery, sliced onions & stir.
  • Step #12 Add broth, sliced onions, thyme, remaining garlic, basil, potatoes, parsley, then stir.
  • Step #13 Bring to a boil, stir & reduce heat to low.
  • Step #14 Cover up & simmer for 1.
  • Step #15 5 hrs, stirrin frequently (approx.
  • Step #16 every 20-30 mins.
  • Step #17 ).
  • Step #18 Add stewed tomatoes, sliced carrots & celery.
  • Step #19 Stir thoroughly & cook for 25 mins.
  • Step #20 Add mushrooms & peas (if applicable) & stir.
  • Step #21 Cook for 5 mins.
  • Step #22 Spoon soup into bowls & serve w/ toasted sourdough or french bread w/ butter.
  • Step #23 Allow to cool slightly before eating.
  • Step #24 (Soup will be scalding hot.
