Blueberry French Toast Recipe

Ingredients
  • 1 loaf Italian bread, cut into 1 inch cubes .
  • 15 g cornstarch .
  • 224 g cream cheese, sliced .
  • 235 ml water .
  • 145 g blueberries .
  • 200 g white sugar .
  • 12 eggs .
  • 80 ml maple syrup .
  • 475 ml milk .
  • 145 g blueberries .
  • 15 g butter

Directions
  • Step #1 Place half of the bread cubes in a lightly greased 9x13 inch baking pan.
  • Step #2 Sprinkle top cream cheese on top of bread cubes.
  • Step #3 Top with 1 c blueberries & remaining bread.
  • Step #4 In a large bowl, beat together eggs, milk & maple syrup.
  • Step #5 Pour egg mixture over bread.
  • Step #6 Cover up pan & put in the fridge overnight.
  • Step #7 The next morning, remove pan from refrigerator 30 mins before baking.
  • Step #8 Preheat oven to 350 degrees F (175 degrees C).
  • Step #9 Cover up pan with aluminum foil wrap & bake in preheated oven for 30 mins.
  • Step #10 Uncover pan & bake for an extra 30 mins, until golden brown & center is set.
  • Step #11 To make Sauce: In a saucepan, mix sugar & cornstarch, add water.
  • Step #12 Boil over med-heat/flame for 3 mins, stirring constantly.
  • Step #13 Stir in blueberries & reduce heat.
  • Step #14 Simmer 8 to 10 mins, or until the berries have burst.
  • Step #15 Stir in butter until melted.
  • Step #16 Serve the sauce over squares of french toast.
