Baked Saffron Rice Recipe

Ingredients
  • 400F g long grain rice .
  • 1 orange, juice & zest of, grated .
  • 1 pinch saffron .
  • 900 ml of hot vegetable stock, from a cube is fine .
  • 1 tbsp butter .
  • 1 onion, finely sliced

Directions
  • Step #1 Heat the oven to 190c/gas 5.
  • Step #2 Add the saffron to the hot stock.
  • Step #3 Heat the butter in a flameproof casserole.
  • Step #4 Gently fry the onion for 5 mins until softened & golden.
  • Step #5 Add the rice & cook for a further min until coated with butter & turning slightly transparent.
  • Step #6 Add the stock & the orange zest & juice.
  • Step #7 Bring to the boil, then cover with a close fitting lid.
  • Step #8 Bake for 25-30 mins until liquid is absorbed & grains are tender.
