Maya Angelou's Man-winning Banana Pudding/banana Pie With Mering Recipe

Ingredients
  • 8 eggs, separated .
  • 4 ripe bananas, thinly sliced .
  • 3 tbsps butter .
  • 3 c vanilla wafers .
  • 3 c milk .
  • 1 tbsp sugar .
  • 1 pinch salt .
  • 1/3 c cornstarch .
  • 1 tbsp vanilla .
  • 3/4 c sugar .
  • 1/2 tsp cream of tartar

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 In a large saucepan, mix 1/2 c sugar, cornstarch & salt; stir until mixed.
  • Step #3 Mix in milk.
  • Step #4 Cook over med-heat/flame, stirring constantly until thickened & boiling; boil 1 min & remove this from heat.
  • Step #5 In a small bowl, whisk egg yolks.
  • Step #6 Then whisk in about 1/2 c of the hot custard until mixed.
  • Step #7 Pour yolk mixture back into the saucepan of custard; cook over med-heat/flame, stirring, for 2 mins.
  • Step #8 Stir in butter & vanilla until mixed.
  • Step #9 Place vanilla wafers [these could be crushed In a large-ish bag with a rolling pin] on the bottom of a shallow 2-quart casserole dish.
  • Step #10 Top with layers of banana slices & custard.
  • Step #11 Repeat layering, ending with custard.
  • Step #12 In a large mixing bowl, beat egg whites that are at about room temp with 1/4 c sugar at lowish speed until frothy.
  • Step #13 Add cream of tartar; increase speed to medium & slowly beat in remaining sugar.
  • Step #14 Beat until egg whites hold stiff peaks.
  • Step #15 Spoon meringue over hot custard as soon as possible, making sure the meringue touches the baking dish on all sides (this prevents shrinking).
  • Step #16 Transfer to oven & bake this until golden, about 20 mins.
  • Step #17 Remove pudding from oven & cool 1 hr.
  • Step #18 Refrigerate at least 4 hrs before serving.
