Chocolate-honey Dome Cake With Chocolate-honey Glaze Recipe

Ingredients
  • 10 oz bittersweet chocolate, sliced .
  • 2 1/4 c all-purpose flour .
  • 1 c heavy whipping cream .
  • 1/4 c unsweetened cocoa powder .
  • 1/2 c honey .
  • vegetable oil cooking spray .
  • 1/2 c honey .
  • 3 tbsps honey .
  • 1/2 tsp salt .
  • 1 tsp baking soda .
  • 1 tsp vanilla extract .
  • 2 large eggs .
  • 1/2 c finely grated bittersweet chocolate (about 1 oz) .
  • 1 1/2 c buttermilk .
  • 1/2 c sour cream .
  • Cake .
  • 3/4 c vegetable oil .
  • 1 1/4 c heavy whipping cream, divided .
  • Cream filling .
  • 1 tbsp water .
  • Chocolate-honey glaze .
  • 3/4 c sugar .
  • 1 tsp unflavored gelatin .
  • 1 c pecans, toasted, sliced

Directions
  • Step #1 For cake:.
  • Step #2 Preheat oven to 350°F Spray 9-inch-diameter cake pan with 2-inch-high sides with nonstick spray.
  • Step #3 Line bottom with parchment round.
  • Step #4 Whisk flour, cocoa powder, baking soda, & salt in medium bowl.
  • Step #5 Whisk sugar, eggs, honey, & vanilla in large bowl to mix.
  • Step #6 Whisk in oil, then half of dry ingredients.
  • Step #7 Whisk in buttermilk, then remaining dry ingredients.
  • Step #8 Pour into prepared pan.
  • Step #9 Bake cake until tester inserted into center comes out clean, about 55 mins (cake will dome).
  • Step #10 Cool 10 mins.
  • Step #11 Invert onto rack; remove parchment.
  • Step #12 Turn over; cool cake completely on rack.
  • Step #13 DO AHEAD Can be made 1 day ahead.
  • Step #14 Store airtight at about room temp.
  • Step #15 For cream filling:.
  • Step #16 Cut cake in half horizontally.
  • Step #17 Place bottom half of cake on cardboard round, tart pan bottom, or springform pan bottom.
  • Step #18 Place 1 tbsp water in small bowl.
  • Step #19 Sprinkle top gelatin over.
  • Step #20 Let stand 10 mins to soften gelatin.
  • Step #21 Bring 1/4 c cream to boil in small saucepan.
  • Step #22 Remove from heat & stir in the gelatin mixture.
  • Step #23 Cool to about room temp, stirring often, about 5 mins.
  • Step #24 Meanwhile, sour cream, beat remaining 1 c cream, using electric mixer, & honey in medium bowl until peaks form.
  • Step #25 Beat gelatin mixture, then grated chocolate into whipped cream mixture.
  • Step #26 Immediately spread filling over bottom half of cake, leaving 1/2-inch border at edges.
  • Step #27 Place top half of cake atop filling, pressing carefully to spread filling just to edge of cake.
  • Step #28 Cover up & chill cake overnight.
  • Step #29 For chocolate-honey glaze:.
  • Step #30 Place chocolate in large measuring c.
  • Step #31 Bring cream & honey to boil in heavy small saucepan, stirring to mix.
  • Step #32 Pour hot cream mixture over chocolate in c; stir until smooth.
  • Step #33 Let cool 5 mins.
  • Step #34 Place rack on rimmed baking sheet.
  • Step #35 Transfer cake to rack.
  • Step #36 Pour glaze over cake, allowing glaze to drip down sides.
  • Step #37 Use spatula to spread glaze over sides.
  • Step #38 Pat nuts onto sides of cake.
  • Step #39 Chill 1 hr to set glaze.
  • Step #40 DO AHEAD Can be made 1 day ahead.
