French Chocolate Cupcakes Recipe

Ingredients
  • 1 tbsp unbleached all-purpose flour .
  • confectioners' sugar, for dusting .
  • 1 c unsalted butter, cut into small pieces .
  • 1/2 c sugar .
  • 9 oz bittersweet chocolate, sliced .
  • whipped cream, for frosting (optional) .
  • Optional .
  • 5 eggs

Directions
  • Step #1 Preheat oven to 350°F Grease an eight-count muffin tin, & line with ccake papers.
  • Step #2 In a saucepan, butter, melt the chocolate, & sugar over low heat/flame.
  • Step #3 Stir frequently until the mixture is smooth.
  • Step #4 Remove from heat & allow this to cool slightly---for 5 mins.
  • Step #5 In a large bowl, beat the eggs together for about 1 min.
  • Step #6 Beat in the flour until incorporated, then slowly add the chocolate mixture until well mixed.
  • Step #7 Pour the batter into the prepared pan.
  • Step #8 Place the pan in a roasting pan & add enough boiling water to come 1/4 inch up the side of the pan.
  • Step #9 Bake 25-30 mins, until the edges of the cakes are set but the center is still soft.
  • Step #10 Remove the foil wrap & place the pan on a rack to cool.
  • Step #11 The center will sink slightly.
  • Step #12 Don't worry if the top cracks a bit.
