Stir-fried Steak Strips With Red Peppers And Cashews Recipe

Ingredients
  • 6 scallions, cut into 2-inch pieces .
  • 1 1/2 tbsps mirin .
  • 1 lb boneless steak .
  • 1 large red bell pepper, cut into thin strips .
  • 1 tbsp balsamic vinegar .
  • 1/4 c water .
  • 1 c unsalted cashews .
  • 2 tbsps fresh ginger, finely sliced .
  • 2 garlic cloves, finely sliced .
  • 1 1/2 tbsps hoisin sauce .
  • 3 tbsps light soy sauce .
  • 1 tbsp vegetable oil (don't use olive oil)

Directions
  • Step #1 Cut the steak into thin slices, trimming any excess fat.
  • Step #2 Place the meat in a bowl & cover with the soy sauce, vinegar,mirin, & 1 tbsps of the ginger.
  • Step #3 Toss to make sure the meat is covered on both sides.
  • Step #4 Cover up & let marinate for at least 30 min or, put in the fridge for up to 24 hrs.
  • Step #5 Remove the steak from the marinade, reserving the marinade.
  • Step #6 In a wok or large skillet, heat half the oil over high heat.
  • Step #7 Add half the garlic,half of the remaining ginger, & all of the steak strips.
  • Step #8 Cook, stirring constantly for about 5 min.
  • Step #9 Remove the meat with a slotted spoon & set aside.
  • Step #10 Put the remaining oil into the wok.
  • Step #11 Add the bell pepper, scallions & remaining garlic & cook, stirring frequently, about 4 min.
  • Step #12 Return the steak strips to the wok & cook another 2 to 3 min or until the meat is cooked through & the vegetables are tender.
  • Step #13 Add the cashews during the last min of cooking.
  • Step #14 Remove the mixture to a serving platter.
  • Step #15 Add the hoisin sauce to the hot wok & stir in the the reserved marinade & the water, stirring well to create a smooth sauce.
  • Step #16 Let simmer about 3 min.
  • Step #17 , or until thickened.
  • Step #18 Spoon the sauce over the meat & vegetables & serve as soon as possible.
