Goat Cheese Pesto Sun Dried Tomato Spread (make Ahead) Recipe

Ingredients
  • 1/2 c sun-dried tomatoes packed in oil, drained & sliced .
  • 1 1/4 tsps dried oregano or 4 tsps fresh oregano .
  • 5-8 leaves fresh basil (for garnish, optional) (optional) or 2-3 oregano sprigs (for garnish) (optional) .
  • 1 garlic clove, minced .
  • 1/4 c basil pesto .
  • 2 loaves French bread, sliced thin (or crackers) .
  • 2 (8 oz) packages cream cheese (softened, light cream cheese works just fine) .
  • 8 oz goat cheese .
  • 1 tbsp sun-dried tomatoes packed in oil (cut into slivers for garnish) (optional) .
  • 1/8 tsp black pepper

Directions
  • Step #1 Line an 8 x 4 loaf pan with plastic wrap.
  • Step #2 Process the first five ingredients in a food processor/blender until smooth.
  • Step #3 Spread one-third of the cheese mixture in the lined pan.
  • Step #4 Top with the pesto.
  • Step #5 Spread one-third of the cheese mixture over pesto.
  • Step #6 Spread the sliced, drained sun dried tomatoes next.
  • Step #7 Top with the remaining cheese mixture.
  • Step #8 Cover up with plastic wrap.
  • Step #9 Refrigerate for at least 8 hrs (or up to 2 days).
  • Step #10 Invert spread onto serving plate.
  • Step #11 Garnish, if desired, with tomato slivers and/or herb leaves.
  • Step #12 Serve with french bread slices (or crackers).
