Smashed Peas With Mint Tapenade Recipe

Ingredients
  • 3/4 tsp salt .
  • 1 tbsp sliced fresh mint .
  • 1 (10 oz) package frozen peas, thawed .
  • 1/4 tsp black pepper .
  • 2 tbsps olive oil

Directions
  • Step #1 Process the peas in a food processor/blender until roughly sliced.
  • Step #2 Stir in fresh mint, olive oil, salt & pepper.
  • Step #3 Can be made ahead of time & put in the fridged, but allow to sit out on counter for 10 mins to bring tapenade back to about room temp.
